Monte Cristos made from leftovers

YUM! Edward whipped up these great Monte Cristos tonight! Truth is, I’ve never had a monte cristo so I don’t really have anything to compare. Nevertheless, dinner was great. The ham was leftover from the Christmas holiday… always the mark of a great meal.


  • Ham
  • Swiss cheese
  • Crusty Italian bread from bakery department of grocery store
  • Bisquick
  • Milk
  • Eggs
  • Powered sugar


  1. Heat up ham in a skillet really quickly
  2. Make a Swiss cheese and ham sandwich using the bread
  3. Make pancake batter using Bisquick/eggs/milk/powered sugar as written in my favorite cookbook Betty Crocker Ultimate Bisquick Cookbook
  4. Dip sandwich in batter
  5. Cook in skillet until cheese is melted, flipping as needed.

    I’m just realizing that I scheduled this post for way later than when we actually ate these. So, no, we are not still eating ham from 3 weeks ago! :)
